Breakfast on the Go

It’s hard to get your kids out the door for school each morning on time.  And it’s especially hard to get them out the door with a healthy breakfast in their stomachs!  Try these healthy, convenient breakfast ideas!  These recipes can be made in advance and your kids can eat them on the go!

 

Healthy Breakfast Muffin

Try this nutrient packed muffin recipe which combines several healthy ingredients including oatmeal, bananas, nuts, applesauce, and carrots!

Ingredients

1 cup whole wheat flour

1 1/4 cups oatmeal (whole grain)

1/4 cup brown sugar

2 1/2 teaspoons baking powder

1/2 teaspoon sea salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon ginger (fresh or powdered)

2 cups bananas, ripe & mashed (about 4 medium)

2/3 cup applesauce

1/3 cup carrot, shredded

1 large egg

2 tablespoons butter (melted)

1/2 cup slivered almonds

1/2 cup walnut pieces

2 tablespoons butter (melted)

1/3 cup brown sugar

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup raisins (optional)

 

Directions

Preheat oven to 375.  Squirt each cup with non-stick cooking spray.  Combine flour, oatmeal, brown sugar, baking powder, sea salt, cinnamon, nutmeg, and ginger in a large mixing bowl.  Stir until well blended.

In a smaller bowl, combine bananas, applesauce, carrot, egg, and butter, stir until well blended.  In another small bowl, combine almonds, walnut, butter, brown sugar, cinnamon, and nutmeg for muffin topping.

Add banana mixture to the flour mixture along with the raisins, if you desire.  Stir until moistened.  Fill muffin cups 2/3 full.  Add about 2 tablespoons of the brown sugar-nut topping into each muffin to cover the top.  Bake for about 20 minutes.

Makes approximately 16 muffins.

 

GrandaGranola Bars

These granola bars are a great on the go breakfast or snack!  You can add raisins, Craisins, or any other dried fruit to this recipe.

Ingredients

4 cups oatmeal

2 cups flour

1 cup coconut

1/4 cup sugar

2 teaspoons baking soda

1/2 teaspoon salt

3/4 cup vegetable oil

3/4 cup honey (or 1/2 cup honey and 1/4 cup molasses)

Raisins, Craisins, or any other dried fruit you prefer to add

Directions

Preheat oven to 375.  Mix dry ingredients together.  Add oil and honey and mix until it is well blended and sticky.  Mix in raisins or other dried fruit.  Press firmly into a jelly roll pan (12 x 15 inch).  Bake 15 to 20 minutes until puffy and soft.  Cut while they are still warm with a pizza cutter.

 

Bran Muffin Bites

These mini-muffins freeze well, so make a double batch and have some now and freeze some for later.  When you are ready, let them thaw or heat frozen muffins in the microwave for 20-30 seconds.  Serve with fruit and milk for a complete breakfast.

Ingredients

1 cup boiling water

3 cups All Bran cereal (divided)

1/4 cup butter

1/4 cup applesauce

1 cup sugar

2 eggs

2 cups buttermilk

2 1/2 tsp. baking soda

1 1/2 cups whole wheat flour

1 cup all-purpose flour

1/2 tsp. salt

 

Gluten MuffinInstructions

Preheat oven to 400.  Mix boiling water and 2 cups All Bran cereal together in a bowl and set aside.  Mix together butter, sugar, applesauce, and eggs.  Mix in the buttermilk.  Stir in baking soda, flours, and salt.  Add the All Bran and water mixture and the remaining 1 cup of All Bran cereal.  Mix until well combined.

Grease mini-muffin tins and fill 3/4 of the way full with batter.  Bake for 10-12 minutes.

Makes approximately 48 mini muffins.
