Busy Mom’s Guide to Summer Freezer Meals

Now is the time to start planning for the busy summer months with freezer meals!  Usually thought of for the winter months, summer freezer meals are far easier to prepare, especially if you have a grill.  Don’t get stuck in your house cooking over a hot stove this summer!  Use your time now while the kiddos are still in school to prepare some summer freezer meals.

 

Pizza Night

Homemade pizza dough is easy to make.  Double or triple this recipe and keep the balls of dough in your freezer for pizza night.  When you are ready to use the dough, just defrost at room temperature, divide into balls and let it rise under a towel on a floured surface for 20 minutes before shaping.  Top with your favorite ingredients while heating a baking sheet in a 425 degree oven.  Bake pizzas for 10-12 minutes, until crust is golden.

Pizza Dough

Ingredients:

3 cups all-purpose or bread flour, plus more as needed
2 teaspoons instant yeast
2 teaspoons coarse kosher or sea salt, plus extra for sprinkling
2 tablespoons extra virgin olive oil

Directions:

Combine the flour, yeast, and salt in a food processor.  Turn food processor on and add 1 cup water and the oil.  Process for about 30 seconds, add more water in small amounts at a time until the mixture forms a ball and is slightly sticky to the touch.  If it is still dry, add another tablespoon or two of water and process for another 10 seconds.  If the mixture is too sticky, add flour one tablespoon at a time.

Turn the dough onto a floured work surface and knead by hand for a few seconds to form a smooth, round dough ball.  Put the dough in a bowl and cover with plastic wrap; let rise until the dough doubles in size, 1 to 2 hours.  Wrap the dough tightly in a plastic wrap or a zipper bag and freeze for up to a month.

This recipe will make one large pizza or up to four minis.

 

Homemade PizzaMeat Marinades

One of the reasons summer freezer cooking is so much easier than winter is that it can be a lot of marinated meats that you can grill!  If you don’t want to make your own marinades, you can still buy a bulk package of meat, split it up between freezer bags, and just add some bottled marinades!  You will still save money buying meat in bulk and on sale, and your meal is prepared ahead of time.  Also, letting the meats marinate as they thaw will make them much more tender and flavorful!

If you would like to make your own meat marinades, here are some great marinade recipes.  I like to get a lot of meals done in a short amount of time, so I will make a large amount of one marinade and then use it on different types of meat (i.e. chicken, beef, and pork).  The taste will be so different it won’t seem like a repeat and you will get several meals put together with little effort.

 

Teriyaki Marinade

Ingredients:

1/2 cup soy sauce

1/4 cup water

2 tablespoons sweet rice wine

1 tablespoon, plus 2 teaspoons brown sugar

1/4 cup sugar

1 1/2 teaspoons minced garlic

1 1/2 teaspoons minced ginger

Directions:

Combine ingredients in a saucepan on medium heat until the sugar is dissolved.

Great marinade for country style pork, chicken drumsticks, breasts, or thighs, and beef.

 

Steak Marinade

Ingredients:

1/3 cup soy sauce

1/2 cup olive oil

1/3 cup fresh lemon juice

1/4 cup Worcestershire sauce

1 1/2 tablespoons garlic powder

3 tablespoons dried basil

1 1/2 tablespoons dried parsley flakes

1 teaspoon ground white pepper

1 teaspoon minced garlic

Directions:

Combine all ingredients and pour marinade over desired type of meat.

Great to marinate beef for fajitas too!

 

asian sauceAsian Marinade

Ingredients:

1/4 cup soy sauce

3 tablespoons honey

2 tablespoons distilled white vinegar

1 1/2 teaspoons garlic powder

1 1/2 teaspoons ground ginger

3/4 cup vegetable oil

2 green onions, chopped

1 teaspoon coarsely ground black pepper

Directions:

Combine all ingredients and pour marinade over desired type of meat.

Great marinade for chicken and beef.

 

Mexican Marinade

Ingredients:

1/3 cup cider vinegar

1/3 cup white vinegar

1/3 cup olive oil

1/3 cup fresh cilantro, chopped

6 cloves garlic, minced

Juice of 1 lime

2 tablespoons cumin

1 tablespoon black peppercorns

1 tablespoon dried oregano

1 teaspoon salt

Directions

Combine all ingredients and mix well and pour over meat.

Great marinade for chicken, beef, lamb, and pork.
