A few times a week our family likes to have dessert after dinner, although, if it were up to my kids it would be every night. So I have been trying to find some healthy dessert recipes to try. I selected the following recipes because the main ingredients are fruit so they have some nutrients but they are still sweet treats the kids will love! So the next time your family is in the mood for something sweet, try one of these fruit-filled dessert recipes!
Baked Apple Crisp
4 medium apples, washed
1/3 cup packed brown sugar
1/2 cup quick-cooking oats
3 tablespoons softened butter
1/3 cup chopped walnuts
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Juice from ½ a lemon (or 1 ½ tablespoons lemon juice)
1/2 cup apple juice
Preheat oven to 350 degrees. Peel the apples halfway and remove the cores taking care not to pierce through the bottom of the apple. Make a nice wide hole in the center so there is plenty of room for the filling. In a medium bowl, mix together the brown sugar, oats, butter, walnuts, spices and lemon juice. Divide the mixture equally between the apples and spoon into the apples mounding it a bit. Place apples in an 8 x 8 inch baking pan and pour the apple juice all around the bottom. Bake for 45 minutes, or until tender. Serve warm with gently whipped cream spooned over the top.
4 medium firm bananas, peeled
1 tablespoon butter
6 tablespoons light brown sugar
1/2 cup orange juice
1/4 teaspoon ground cinnamon
Low-fat vanilla frozen yogurt
Cut bananas in half lengthwise. Melt butter in a nonstick skillet over medium-high heat. Add brown sugar and lay the banana slices on top, cut side up. Cook undisturbed for 20 seconds, then add orange juice and cinnamon. Cook for 10 seconds, then turn bananas carefully and cook for 45 to 60 seconds more, basting with the pan sauce. Divide the bananas and drizzle the sauce on top. Serve immediately, with frozen yogurt.
2 cups milk (or use half milk and half vanilla yogurt for a creamier shake)
1 tablespoon honey
1 teaspoon vanilla extract
2 cups frozen strawberries
In a blender, combine milk, honey, vanilla and frozen strawberries. Blend until smooth. Pour into glasses and enjoy!
Simple, sweet, and delicious! All you need is 1 fresh ripe pineapple and metal or pre-soaked wooden skewers.
Preheat outdoor grill to about 350 degrees. Remove the skin from the pineapple, core, and cut pineapple into long pieces. Skewer pineapple and place on a hot grill. Grill it until it is slightly browned and heated through by cooking pineapple skewers for 5 minutes, turning the skewers about every minute to ensure that all sides of the pineapple are browned. Remove the pineapple kebobs from the grill and allow to cool slightly, enjoy!
