Homemade Granola

by Wendy on March 6, 2014

Have you made homemade granola?  Granola is a perfect grab and go snack and makes a perfect quick breakfast when served with berries and yogurt.  Homemade granola is super easy to make, and it’s so much cheaper to make it at home than to buy it in the store.

You can customize your homemade granola, and cater your granola to fit different dietary needs.  Here are two different homemade granola recipes you can try and a third that can be made for those with nut allergies and gluten intolerance.

Homemade Granola (recipe #1)

2 pounds of rolled oats

3/4 cup of raisins

1/2 cup of almonds

1/2 cup of crushed walnuts

2 cups of sugar

1 cup of water

1/2 stick of butter

1/4 cup of honey

1 tablespoon of salt

1/2 cup of dried cranberries

In a large mixing bowl, combine oats, raisins, almonds, and dried cranberries, walnuts, salt and honey. Stir until well incorporated. In a small sauce pot, add sugar and water and simmer until slight caramel color comes to the liquid. Add butter in small pieces and stir well with a wire whisk. When butter is well incorporated pour caramel sauce over oats. Stir well and spread over a sheet pan and allow to cool.

Homemade Granola (recipe #2)

5 cups old-fashioned oats

1 cup brown sugar

1 cup flaked coconut

1 cup wheat germ

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/2 cup water

1/2 cup vegetable oil

1 tablespoon vanilla extract

1/2 cup raisins (or any other dried fruit)

1/2 cup sliced almonds

Preheat oven to 325 degrees F.  Mix oats, brown sugar, coconut, wheat germ, cinnamon, and nutmeg together in a large bowl. Stir water, oil, and vanilla extract into the oat mixture; spread onto a baking sheet.  Bake in preheated oven, stirring every 15 minutes, until golden brown and crunchy, about 1 hour; transfer to a bowl. Stir in raisins and almonds into the granola.

Nut Free Homemade Granola (can also be made gluten free)

1/3 cup brown sugar

1/3 cup oil

1/2 cup honey

2 teaspoons vanilla

3 cups old fashioned oats (use gluten free option)

4 cups quick oats (use gluten free option)

1 cup coconut (optional)

1 teaspoon cinnamon

In a small saucepan mix together brown sugar, oil, and honey. Bring to a boil. Remove from heat and add vanilla and cinnamon.  In a large bowl combine oats, coconut, and sugar/oil mixture.  Stir until oats are well coated and everything is combined.  Spread into 2 9×13 pans.  Bake at 350 degrees for 10 minutes.  Stir, turn off your oven, and put the granola back into the oven for 3-4 hrs. The heat left in the oven will finish cooking this. Remove from oven after 3-4 hours. Let cool and store in an air tight container.
