Oh, the Weather Outside is Frightful, but Hot Soup is so Delightful!

Who doesn’t love hot soup on a cold day?  December is a wonderful month to make a big pot of soup that can be shared with family and friends or saved for later.  I love making a huge pot of soup so we can have some that night and freeze some for meals later that month.  Soup is also great to send in kid’s school lunch to warm them up on a cold day!  Just freeze in individual kid size portions that will be ready to warm up and send in their lunch thermos.  Here are some kid friendly soup recipes your whole family will enjoy!

My family loves the Olive Garden’s soups and Pasta e Fagioli is our family’s favorite.  This recipe is filled with a healthy mix of veggies and beans that makes this a hearty and delicious meal you and your kids will love!

Olive Garden’s Pasta e Fagioli


2 lbs. ground beef

1 onion, chopped

3 carrots, chopped

4 stalks celery, chopped

2 (28 ounce) cans diced tomatoes, undrained

1 (16 ounce) can red kidney beans, drained

1 (16 ounce) can white kidney beans, drained

3 (10 ounce) cans beef stock

3 tsps. oregano

2 tsps. pepper

5 tsps. parsley

1 tsp. Tabasco sauce (optional)

1 (20 ounce) jar spaghetti sauce

8 ounces pasta


Brown beef in a skillet and drain fat.  Add to crock pot with all ingredients except the pasta.  Cook on low for 7 to 8 hours or high for 4 to 5 hours.  During the last 30 minutes on high or last hour on low add the pasta.


This taco soup recipe is delicious and great for a holiday pot luck party!  I like to double the recipe in a large crockpot so I have some to freeze for those nights that I do not have time to cook.

Taco Soup


1 1/2 pounds cooked shredded chicken (you can get a store bought rotisserie chicken for convenience)

1 15 oz. can diced tomatoes

1 10 oz. can enchilada sauce

1 medium onion chopped

4 oz. can diced green chili’s

1 tsp. minced garlic

14 oz. can chicken broth

1 tsp. cumin

1/2 tsp. chili powder (optional)

1 tsp. salt

1/2 tsp. pepper

10 oz. frozen corn

1 can cream corn

1 bay leaf

1 Tbsp. dried cilantro or lots of fresh cilantro


Fresh cilantro

Sour cream


Tortilla strips


Cook in a crock pot for 3 to 4 hours on high or 6 to 8 hours on low.  Add the cooked chicken 1 to 2 hours before cooking time is done.


Here is a delicious old fashion chicken noodle soup recipe that can be prepped and cooked in under an hour.

Chicken Noodle Soup


2 tsps. butter

1 cup sliced celery

1 cup chopped carrot

1/2 cup chopped onion

1 small potato, diced

1 tsp. thyme

1 tsp. poultry seasoning

4 (14 ounce) cans chicken broth

2 tsps. chicken bouillon

4 oz. egg noodles

2 cups cooked chicken



Melt butter in large pot and sauté the celery, carrots, and onion for 2 minutes.  Add potato, thyme, poultry seasoning, chicken broth, and bouillon.  Bring to a boil and add noodles and chicken and cook on low for 20 minutes.  Sprinkle with parsley.
