Save money and eat healthier by eating seasonal produce.  Learn what fruits and vegetables are in-season during the spring months and how you can incorporate these foods into your family’s diet!  Strawberries are in season!  Try making a homemade strawberry fruit leather your kids will love!

Your kids will love dipping fresh strawberries into this chocolate flavored yogurt dip!

“Chocolate” Dip and Strawberries

Ingredients:

2 packets sugar-free hot chocolate mix

1 quart plain fat-free yogurt

Strawberries

Directions:

Combine hot chocolate mix with the yogurt to form a chocolate flavored yogurt dip.  Serve with fresh strawberries.

 

Fruit leather that is made from 100% fruit can be expensive!  Now that strawberries are in season you can make your own strawberry fruit leather with this recipe.

Strawberry Fruit Leather

Ingredients:

2 cups fresh strawberry puree

1 tablespoon lemon juice

1 cup unsweetened applesauce

Directions:

Combine pureed strawberries and applesauce with lemon juice.  Line a 10×15 jelly roll pan with plastic wrap or a Silpat baking mat.  Pour fruit into pan and spread evenly.

Bake about 5 hours at 200 or until leather pulls away from wrap and is not too sticky to the touch.  Flip leather onto counter, peel away plastic, cut into slices, and wrap each piece in plastic.

Or if you have a food dehydrator with a fruit leather rack, dry leather until it is smooth and not sticky.

 

This delicious Mongolian Beef recipe incorporates seasonal vegetables like bell peppers and snow peas for a healthier dish.

Mongolian Beef

Ingredients:

1 lb. flank steak

1/4 cup cornstarch

2 tablespoons canola oil

1 red bell pepper, cut into chunks

1 cup snow peas

1 cup broccoli florets

4 green onions, sliced

1 tablespoon grated gingerroot

1 tablespoon canola oil

1/4 cup hoisin sauce

1/4 cup light soy sauce

1 tablespoon brown sugar

1/2 teaspoon garlic powder

Directions:

Slice flank steak into1/4 inch strips (optional: wrap the flank steak in plastic wrap and freeze for 1 hour to make slicing easier).   Toss with cornstarch and let sit for 15 minutes.

Meanwhile, make sauce by combining hoisin sauce, ginger, soy sauce, brown sugar, and garlic powder.

Stir fry the veggies and ginger in 1 tablespoon canola until cooked but still crisp.  Remove from pan and set aside.  Then add the remaining canola oil and stir fry the beef over high heat until browned, about 4 minutes or so.  Return veggies to pan, add sauce, and cook for about 1 minute longer.

Serve over rice.

 

A great kid snack or side to almost any meal, this roasted green bean recipe will get kids to eat their green veggies!

green beansRoasted Green Beans

Ingredients:

2 lbs. green beans

1 -2 tablespoon olive oil

1 teaspoon kosher salt or half that amount of table salt

1/2 teaspoon fresh ground pepper

Directions:

Preheat oven to 400°F.  Wash, dry well, and trim green beans.  Place green beans evenly on a jelly roll pan and drizzle with olive oil.  Sprinkle with salt and pepper to taste.

Roast for 20-25 minutes, turning after 15 minutes, until beans are brown in spots and somewhat shriveled.
